Bill was the first to try his hand  at working on the spring rolls.  Mai did teach us that when placing the material it should be done at a corner of the pastry.  Start with a corner, add ingredients, roll a couple of turns, turn the outer corners in to make a rectangle, then continue rolling.  When you are about two turns before finishing, apply a little egg wash to the roll so that it will stick and hold together for the later deep frying.
